Wondering what to do with all those eggs?

Are you looking for something new to do with all your left over hard boiled eggs?
This recipe is a favorite in my family. My mom could never make enough for all of us kids! Yummy!

Curried eggs on toast
4 Tbls Butter
4 Tbls Flour
3 cups milk
8 hard boiled eggs
1 tsp - 1 Tbls yellow curry powder (to taste)
Salt and Pepper
6 slices Whole wheat toast

Melt the butter in a medium sauce pan on low heat
Whisk in the flour to form a paste
Slowly add the milk, whisking to prevent lumps
Turn heat to medium and whisk regularly while bringing sauce to a simmer
Turn heat down to low and simmer for 5-10 minutes stirring regularly to make sure it doesn't stick to the bottom.
Add curry and salt and pepper to taste
Slice and add eggs
Serve hot over toast
Optional: spread cooked drained spinach over toast and then add sauce.

Note: amounts are approximate! feel free to adjust to your taste. I think this will serve 2-3 people.
